- 1 cup maida / plain flour
- 2 eggs

- 2 banana leaves (soaked in water till soft) or aluminum sheets
- ½ cup oil for shallow frying the curry puffs.
Procedure
Step 1. Boil the veggies with a pinch of salt till they are tender but still crunchy. Set aside to cool down completely.
Step 2. Combine flour, salt, eggs, and maida in a mixing bowl until you get a soft and smooth batter like karai.
Step 3. Dish out the amount of batter required from the bowl and spoon out a small quantity into each banana leaf or aluminum sheet and fold like a traditional dumpling.
