How to make Singapore Curry Sauce Recipe

Ingredients:

  • 2 red chillis, sliced
  • 2 red capsicum, sliced
  • 6 small shallots
  • 1/4 cup of water chestnuts (optional)
  • 1/4 cup of dried shrimp, soaked in hot water for 30 mins and drained
  • 1 1/2 tbsp of sugar
  • 3 tbsp of roasted peanuts, roughly chopped (optional)

Method:

Step 1: Cook the onions and garlic in a cooking oil preferably; add more if you like. (I used the same oil I used to cook the chicken.)

Step 2: When the onions are soft and translucent, add 5 tbsp of water chestnuts, 1/4 cup of dried shrimp, 1/4 cup of sugar, 2 crushed red chillis, and 4 crushed capsicum. Simmer until all ingredients are cooked through.

Step 3: Add the chicken’s cooking oil to a pan and cook the chicken. Chop or shred into bite-size pieces.

Step 4: To serve, transfer the sauce ingredients and chicken meat into a separate bowl to do it on top of rice and mains as you like!

Step 5: Enjoy!
