  • 1/4 Cup Water
  • 1 Cup Cooked Tofu – Firm
  • 1/4 Cup Vegetables (Asparagus, Broccoli, Carrots, Cassava, etc.)
  • 2 Cloves Garlic, Minced
  • 1 Tablespoon Soy Sauce
  • 1/4 teaspoon Ground Ginger
  • 3/4 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1/4 Teaspoon Baking Soda
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon ground Coriander
  • 1/4 teaspoon ground Cumin
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Sriracha Sauce – (I used Huy Fong)
  • 1 Tablespoon Olive Oil

Step-1. Prepare the rice according to the directions on the box. Bring the water to a boil, and then add the rice. Reduce the heat to low and cook the rice for 10 – 15 minutes or until most of the water has been absorbed.

Step-2. While the rice is cooking, prepare the rest of the ingredients. I like to slice up the tofu and cut the veggies into bite-sized pieces.

Step-3. Add the soy sauce, ginger, salt, pepper, baking soda, and spices when the rice is done. Add the lemon juice and sriracha sauce.

Step-4. Remove from heat and add the veggies and tofu. Stir the mixture and add the olive oil. Serve immediately.

Tips:

  • I like to serve the sriracha and lemon flavor as a dipping sauce for the rice and veggies.
