- 1 teaspoon of salt
- 1 cup sugar
- 3/4 cup butter at room temperature
- 3 eggs

- 1-1.5 cups butter at room level soften
- 2-3 cups powdered sugar 8 tablespoons lemon juice
- Preheat your oven to 350 degrees and grease a cake pan.
For the cake
Step 1. Using a mixer with a paddle attachment, mix the flour, soda and salt at medium speed.
Step 2. Add sugar, butter and lemon juice while continuously mixing. Add the vanilla extract once the butter is completely incorporated and a milk-like mixture is achieved. Continue mixing until dough comes into one even colour.
Step 3. Add eggs into the dough and mix for about 30 seconds till everything is incorporated well. The mixture should no longer look dry or sticky (if it does, add one teaspoon of flour).
Add to the pan and bake at 350 degrees for 35-40 minutes or until a toothpick inserted in the centre of the cake comes out clean.
For the Frosting
Step 1. Using a stand mixer with the paddle attachment, beat the butter until it comes into one consistent colour (use low speed). It takes about 5 minutes or so.
Step 2. Add sugar, one cup at a time, beating well between cups.
Step 3. Add lemon juice and mix at low speed till it comes into one consistent colour.
Step 4. Increase the speed to medium and mix until it is fluffy and creamy (about a minute). Add more sugar if you would like it to be sweeter. Frost the cake and decorate the cake as desired.
