Ingredients:
- 1 pkt Mock Chicken Strips
- 4 medium-sized potatoes diced
- 2 medium-sized sweet potatoes diced
- 1 pkt baby spinach fresh
- 1 pkt coriander fresh
- 1 medium-sized onion chopped
- 2 cloves garlic minced
- 2 teaspoon ginger fresh
- 1 teaspoon turmeric
- 1 teaspoon curry powder
- olive oil
- 2 sticks cinnamon
- 1 tin coconut cream
- Himalayan Pink Salt
Instructions:
1. Place a large pan on the hob and add 3 tablespoons of vegetable oil.
2. When the oil is hot, add the onions and garlic to it. Fry until they are soft.
3. Add the ginger and turmeric and fry for another 1 minute before adding potatoes and sweet potatoes. Fry for approximately 10 minutes until they start to brown slightly.
4. Add in the coriander, curry powder, and coconut cream.
5. Add the Mock Chicken strips and simmer on low heat until all the vegetables are cooked approximately 20 minutes.
6. Serve hot with rice or flatbreads.
Note: The spices can be changed to suit your taste; you could even add a few chilies for a spicier version. Don’t forget to serve it with rice!
