How To Make Miso Maple Loaf Cake Recipe?

Ingredients
- 4 ounces/113 grams unsalted butter, at room temperature, plus more for the pan
- 1 ¾ cups/238 grams all-purpose flour, plus more for the pan
- 1 ¾ teaspoons baking powder
- ¼ teaspoon baking soda
- 1 ½ teaspoons kosher salt
- ½ teaspoon ground ginger
- 2 ¼ cups/400 grams sugar, plus more as needed
- 1 ½ tablespoons dark miso paste (found in the Asian food section of your supermarket)
- 2 eggs, at room temperature
- ⅓ cup/75 grams maple syrup (dark brown if possible)
- ¼ cup/50 milliliters coconut milk, full fat and unsweetened (or another type of milk with a fat content of at least 8%)
Instructions
Step 1: Preheat the oven to 350°F/180°C. Grease a bundt pan (or any other type of pan that holds 7 cups/1.7L of batter).
Step 2: Sift the flour, baking powder, baking soda, salt, and ginger into a 9 x 5 x 3-inch/23 x 13 x 7.5-centimeter loaf pan; set aside.
Step 3: In a large bowl, beat the butter and sugar with an electric mixer on medium speed for about 2 minutes.
Step 4: Add the miso paste to the butter mixture, beating for about 1 minute.
Step 5: Add the eggs, mixing well after each addition.
Step 6: Slowly add in the flour mixture and milk, beating at low speed just until incorporated. Be careful not to overmix.
Step 7: Pour the batter into your pan and bake until golden brown (about 60 minutes).
Step 8: The cake will appear to be a bit dry at first, but as it bakes, it should become more moist.
Step 9: Remove from the oven and transfer to a cooling rack. It’s now ready to serve!

If you don’t have any baking powder or baking soda, you can substitute with 2 teaspoons of vinegar in each.
To replace the milk and coconut milk together, use 8 ounces/226 milliliters of non-dairy milk and 2 tablespoons of melted non-dairy butter (canola oil will work too). To replace the butter with coconut oil, use 4 tablespoons.
