- 2-3 tsp Kashmiri chili powder
- ¼ tsp ground fenugreek
- A pinch of asafetida
- A sprig of curry leaf
- Salt to taste
Instructions:
Step 1: In a pan, heat the oil and add mustard seeds. When the seeds crackle, adds green chilies, garlic, and ginger. Stir for a few minutes.
Step 2: Add tamarind and bring to a boil. Add jaggery, turmeric, chili powder, fenugreek powder, asafetida, and salt. Mix well. Please turn off the flame and leave it to cool down.
Step 3: Add lemon juice and mix well.
Step 4: Take the water in a pan and add 2 tablespoons of salt. Add lemon slices and bring it to a boil. Let it boil for 10 minutes on high heat. After that, drain the water and keep them aside.
Step 5: After preparing the tamarind, lemon curry is ready by cooking it with fresh coconut juice, tamarind, and ginger.
Step 6: Add sugar and curry leaves and slowly simmer for 10 minutes. Serve lemon curry with rice or bread. You may also add shredded coconut to taste even on the last step.
