- 1 tsp coriander powder
- 1 tsp cumin powder
- 2 tbsp of curry powder.
- 1 tsp turmeric powder
- 1 tbsp of sweet soy sauce, dark soy sauce
- 1 tsp of black pepper powder
- 2 tbsp chicken gravy powder.
- 2 tsp curry paste; you can replace it with curry powder if you don’t have it
- 8 shallots, finely chopped
- Three cloves of garlic, crushed or finely chopped.
- 3 tbsp vegetable oil or butter to fry the chicken.
- 3-4 kaffir lime leaves (optional)
- 1 small knob of butter or ghee (Optional to add at the end)
Cooking Method
Step 1. Cut the chicken thighs or breasts into cubes and marinate with soy sauce and rice vinegar. Place a piece of scotch tape on top and set it aside.
Step 2. In a pan that has oil, heat the oil until hot and fry off the chicken cubes until browned all over but not cooked through
Step 3. Put it all in a large bowl. Add all the remaining ingredients, except the chicken gravy powder
Step 4. Mix well and set aside 1 hour to allow the flavors to blend
Step 5. Heat some oil in an omelet pan or wok. When hot enough, add some curry paste and fry off until you get a light brown color
Step 6. In the same pan, add butter and fry off the rest of the ingredients. Add chicken gravy powder and mix well until you get a light brown color
Step 7. Add curry paste and curry powder to the omelet pan when it’s hot, and stir well until you get a nice curry flavor. Add chicken to the omelet pan
Step 8. Stir well until chicken is cooked
Step 9. Add in lime leaves and stir again
Step 10. Turn off the fire and add some butter to give a nice flavor. Serve hot with rice or bread. Enjoy!
