- 3 cups of all-purpose flour (1 cup = 125g)
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup sugar (200g)
- 1 whole egg (50g)
- 6 tablespoons of butter, melted and cooled
- 1 cup hirameki or mirin
- 2 teaspoons of matcha green tea powder (momo chanaka as it’s called in Japan) (30g)
- 4 tablespoons of water (70ml)
Preparation
Step-1.
To make the syrup, add matcha powder and a mixture of mirin and water in a pot. Mix well and cook until it boils. Then turn the heat off and let it cool down.
Step-2.
The next step is to make the cake batter. Mix hirameki, sugar, and melted butter in a bowl until it becomes creamy. Add egg one by one into the bowl and mix well after each addition.
Step-3.
In another bowl, combine flour, baking powder, and salt. Then add matcha green tea powder and mix well. Add half of the batter into the bowl with the dough and mix well. Add the second half of the batter into the first one and mix well until no dry ingredients are left in the batter.
Step-4.
Transfer cake from pan/pudding pan onto a serving plate. It would help if you had a cake about 2 inches bigger in diameter than the pan or pudding pan you used to prepare it.
Step-5.
Apply or brush the mixture of syrup and butter on the cake. Then apply another layer of syrup and butter on top of the cake. And finally, apply the rest of the syrup and butter to cover the cake completely.
You can serve it with mixed green tea or store it in the fridge, and this way, you can keep it for several days by keeping it in an airtight container.
