Instructions:
Step 1: Under pressure, cook your shrimp for 1 minute
Step 2: Set your Instant Pot to saute mode and let it heat up.
Step 3: Add oil or butter to Instant Pot. Add onions and peppers and saute for about 5 minutes (shorter if pre-cooked shrimp) until slightly browned or softened.
Step 4: Add garlic, ground spices, chili powder, cumin, coriander, curry powder, and ginger. Stir everything together until well combined.
Step 5: Add coconut milk and chicken broth.
Step 6: Add in shrimp (and optional pork).
Step 7: Stir together until combined. Press cancel and close lid, set steam release handle to sealing position.
Step 8: Set your Instant Pot to high pressure for 4 minutes. Let the Instant Pot naturally release stress for 5 minutes, then remove any remaining pressure manually by flipping the steam release handle to the venting position.
