Method

Step-1. In a medium bowl, mix whole milk and eggs.

Step-2. Add curd or Yogurt and mix well.

Step-3. Add flour, baking powder, and baking soda to the milk mixture in the same bowl. Mix well to combine.

Step-4. In another bowl, heat ghee on low flame until it starts melting or warm up to a melted state. (approximately 10 minutes on medium flame) Take Ghee in the mixer, add cardamom powder and mix well. Set aside.

Step-5. Add sugar to the flour mixture with ¼ cup of melted Ghee and mix well by hand.

Step-6. Grease the square pan with some ghee and keep it aside.

There is no need to grease the top of the cake

Step-7. Now spread ½ the dough on the greased pan, spread Ghee all over it evenly, add more dough on top, and spread Ghee evenly over it. (approximately 1 inch high).

Step-8. Fill the pan with hot milk/egg mixture, cover, and let it sit for 15-20 minutes or until the top is slightly tacky.

Step-9. In a large bowl, whisk eggs until frothy, then add Yogurt and mix well.

Step-10. Pour egg mixture on the Gulab jamun cake and spread it evenly on top of it in a circular pattern using a rubber spatula. Sprinkle cardamom powder over it evenly by hand.

Step-11. Bake the cake in a preheated oven at 200C for 20-25 minutes or until the top is golden brown. Let it cool down on the wire rack.
