  • 1 can of Coca-Cola
  • 2 sticks of butter (8 tbsp) creamed with 2 cups of sugar
  • 1 tsp. vanilla extract
  • 2 tsp. baking soda
  • 2 cups of buttermilk
  • 1 cup of shredded carrots

Prepare

Step 1. Sift together the flour, baking soda and powder, and salt in a large bowl.

Step 2. In a separate bowl, mix the egg replacer with the 2 cups of warm water until smooth. 

Step 3. Then add in the Coca-Cola and stir until bubbles form.

Step 4. Stir in the vegetable oil, vanilla extract, and carrots.

Step 5. Add the wet ingredients to the dry ingredients mixing gently after each element has been added.

Step 6. Pour into the prepared pan.

Step 7. Bake at 350 degrees for 35 minutes or until a toothpick inserted in the center comes out clean. 

Step 8. While baking, make the icing by combining all of the ingredients in a stand mixer and mixing it on high for about 10 minutes.

Step 9. Once the cake has cooled completely, spread the icing evenly across the top of your cake. Let it harden for about 15 minutes, and then serve!
