- 1/2 bell pepper, cut into cubes (optional)
- For The Massaman Curry Paste:
- 1 tsp red curry paste or massaman curry paste
- 1 ½ cups coconut milk
- 2 tbsp palm sugar or brown sugar
- 2 tbsp fish. sauce
- 1 tbsp ground coriander
- 1 ¼ tsp ground turmeric
- 2 ½ tsp salt, or to taste (adjust to taste)
For the Curry
- 4 cups chicken stock, or 2 cups chicken stock and 2 cups vegetable stock
- 3 potatoes, cut into large chunks (or 4 potatoes)
- Three green onions, chopped.
- Fresh cilantro, chopped. (optional)
