- ½ cucumber (peeled and diced)
- 2 medium chicken breasts (cut into strips)

Instructions
1. Heat 3 tsp oil in a heavy-based frying pan. Fry the chicken on high heat until browned. Add half the garam masala, half the curry powder, and salt to taste. Cook for 3 minutes until fragrant and golden-brown, stirring regularly.
2. Meanwhile, cook onions in a small frying pan with 2 tsp vegetable oil and a splash of water until lightly browned but not burnt or caramelized (about 2-3 minutes).
3. Add ginger and garlic, followed by curry powder, chaat masala, and garam masala. Fry until fragrant.
4. Add tomatoes, remaining garam masala, and salt. Stir well to combine the spices with the tomato juice. Cook for another 2-3 minutes on low heat until all the liquid has evaporated and the sauce is slightly dry.
5. Tip in chicken strips to coat evenly in the spices, and add chickpeas and chopped cucumber into the mixture (leave ¼ of mixture off). Cook for another 3-4 minutes until chicken is tender and done.
6. Serve with fresh coriander, lime juice, and a fried onion slice on top if desired.
