- 1 pinch asafoetida powder (be careful not to use too much!)
- 2 medium chopped onions
- 1⁄2 teaspoon ginger paste
- 1⁄2 teaspoon garlic paste
- 1 -2 teaspoon chili powder (depends on the heat level you like)
- 1 teaspoon turmeric powder
Instructions
1. Wash the cauliflower florets and pat dry.
2. Cook the florets in a pan with half of the oil until golden brown from both sides (about 10 minutes on the medium-high flame); give a chance to fry all of them for about 8 mins or cook until done.
3. Mix all spices, tomatoes, and salt into a bowl and add cauliflower florets.
4. Add half water and mix. Cover with a lid and cook for 15 minutes.
5. In a separate pan or deep cooking pot, heat the remaining oil on medium flame (use the same pan)
6. Add cumin seed when hot enough and fry until they start to change color (be careful not to burn them)
7. Add onions and cook until translucent (about 2 minutes)
8. Add all spices, garlic, and ginger to the onion-cauliflower mix and mix well.
9. Cook for another 3 minutes. Add the remaining water, cover the lid and cook for 20 minutes.
10. Mix well and taste before serving, along with fresh coriander leaves or cilantro leaf-onion mixture you can make at home for this recipe (recipe will be posted shortly).
