2) Glass jars that can hold a certain amount of jelly ( i used pint jars) – also make sure there is some headroom up in the jar before you fill it with jam [i used pints]
3) wooden spoon (i like using these because they are easier to clean and do not get stained easily.
Ingredients
- 2 cups pineapple, peeled and cubed
- 4 carrots, peeled and cubed
- 1 cup coconut flakes
- 1 tablespoon orange juice or vegetable broth (optional)
- 3 tablespoons arrowroot flour or corn starch [optional]
- 2 cups sugar [I only had 1/2 cup, and it worked fine]
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- 1 (1.75 ounces) package powdered fruit pectin
- 1 teaspoon ground cinnamon
- ½ cup flaked coconut (Optional)
- ½ cup raisins (Optional)
- 3 tablespoons lemon juice
Instructions:
Step-1. Preheat oven to 425 degrees F.
Step-2. Line a cookie sheet with parchment paper and set it aside. Combine coconut, sugar, pineapple, cauliflower, and carrots; spread evenly on a prepared cookie sheet. I like to do this because the veggies bake faster when it is fewer layers.
Step-3. Bake for 15 minutes; stir the mixture gently to coat all sides of the pineapple and cauliflower with the melted sugar and coconut mixture [this should help prevent sticking].
Step-4. When the mixture comes out of the oven, remove the pan from the oven and immediately turn the mixture onto a large white plate or cutting board.
Step-5. Add orange juice or vegetable broth [if using] to pineapple and carrots. Mix well and coat them well with juices from the baking pan. Allow this mixture to cool slightly before combining all ingredients in a large bowl; add arrowroot flour if you want to thicken the jam [not required]
Step-6. Combine slowly into a large mixing bowl or food processor.
Step-7. Then add in the other ingredients that are listed in the recipe
Step-8. Add the powdered pectin, cinnamon, and cloves [more if you wanted to] and mix well to combine.
Step-9. Mix in the flaked coconut and raisins [if using]. Set aside 10 jars at a time. They will fill them up eventually, so it is best to initially make more than your needs.
Step-10. Now put the mixture into jars. Make sure you leave up to one-inch headspace. Place the lids on and put them in a cool, dry place for 7-10 days.
Step-11. Check the consistency of your jam before giving it to someone as a gift if you plan to give it away as a gift for Christmas, making sure that it wrinkles when you push on it with your finger and then give it away!
