- 600 gms Chicken (small curry cut pcs.)
- 3 nos. Cloves
- 1 no. Cinnamon (one-inch piece)
- 2 nos. Green Cardamom
- 1/4 tsp Turmeric Powder
- 1.5 tsp Red Chilli Powder
- 2 sprigs of Curry Leaves (15-20 leaves)
- 3 medium Tomatoes (chopped)
- 1 tsp Cumin Seeds
- 1/2 tsp Fennel Seeds
- 3 medium Onions (finely chopped, around 150 gms)
- 1 1/2 tsp Coriander Seeds
- 3 tbsp Refined Oil
- 1 1/2 tsp Poppy Seeds (Khus khus)
- 3 nos. Green Chillies cut
- Salt (Like Quantity)
For Seasoning:
- 1/4 tsp Cumin Seeds
- 1/4 tsp Black Pepper (Boiled, crushed)
METHOD For The Best Andhra Chicken Curry Recipe
1. Put the chicken inside a bowl and add salt. Add turmeric powder, red chili powder, coriander, cumin, and cinnamon. Mix well to coat the chicken with the dressing
2. Cover with plastic and leave it for 3-4 hours in the refrigerator (preferably overnight)
3. In a grinder or blender, grind with 1/2 cup water cashew nuts, green chillies, curry leaves, and some coarsely ground coconut till smooth. Remove into a large bowl
4. Add the chicken pieces to the bowl and mix well
5. Take a large bowl, add 2-3 tbsp oil and mix well with the remaining seasoning ingredients (poppy seeds, cumin seeds, black pepper, fennel seeds, curry leaves, and green chili) until combined. Add half of this seasoning mixture to the chicken
6. Add half the water to the bowl and mix well again. Now add the coconut mixture to this and mix well until combined. Finally, add the chicken mixture to this and mix well. Cover and let it marinate in the fridge overnight
7. Take a cooking pot (big enough to fit all ingredients) and heat oil in it over medium heat. Add onions, tomatoes, green chilies, coriander, and fennel seeds. Roast for 3-4 mins, then turn off the flame. Add water as needed (make sure you don’t add too much water; otherwise, your gravy will be too thin).
8. Once the oil has separated to one side, add the chicken and coconut mixture with salt, turmeric powder, and red chili powder (if you want, add some water at this stage but don’t add too much).
9. Mix well, cover, and cook for 20-22 mins over medium flame (keep stirring occasionally).
10. Once the chicken gets cooked completely, garnish with coriander leaves and switch off the flame.
