- 1/2 cup Curd
- 4 Onions
- 2 tsp Coriander Seeds
- 8 Cloves
- 4 Cardamom
- 1 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 3 to 4 Cinnamon Sticks
- 2 to 3 Star Anise
- 1 1/2 tsp Ginger Garlic Paste
- 2 tsp Khas Khas
- 2 tsp Chilli Powder
- Salt (Like quantity)
Method
1. Wash chicken pieces thoroughly in water.
2. Add 2 cups of water and salt to the chicken pieces and boil them on low heat till the chicken is cooked completely. Once the chicken is tender and cooked, strain out the water. Reserve one cup of cooking liquid and keep it aside.
3. Take another pan to add oil or ghee to it; when hot, add cloves, cardamom, and cumin seeds to allow them to crackle. Add onions and sauté on a medium flame till golden brown color.
4. Next, add ginger garlic paste and sauté for 10 seconds. Then add green chilies and sauté for another 30 seconds.
5. Add coriander seeds, turmeric powder, and Khas Khas, and allow it to crackle for 5 seconds or so while stirring constantly.
6. Add chopped onions and sauté until they turn bright golden brown.
7. Add chicken pieces, salt, and red chili powder and mix well with the spice mix and onions on a low flame.
8. Then add the reserved cooking liquid to it and mix well.
9. Add 1 cup of water and allow it to boil till the chicken is tender on a medium flame.
10. Then add the yogurt and mix well and allow the curry to thicken completely by constantly stirring on a medium flame.
11. Lastly, add garam masala powder, cilantro leaves, and mint leaves and cook for another 1 minute on a low flame. Switch off the burner when done.
12. Garnish the chicken curry with coriander leaves and serve hot with rice, roti, or chapati.
