Ingredients:

  • 4 x 400g skinless, boneless chicken breasts
  • 2 tbsp olive oil
  • ½ tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 onion, halved and thinly sliced
  • 3 cloves of garlic, finely chopped
  • 2 tbsp tomato puree/paste (or tinned chopped tomatoes)

Method:

Step 1: Heat a large pan or wok and add the olive oil.

Step 2: Add the thinly sliced onion and stir until soft.

Step 3: Add the garlic, cumin, and turmeric powder and stir for a minute or two until fragrant.  Stir in the chili powder, then pour in the chicken pieces and cook for about three minutes over medium heat until sealed all around.

Step 4: Pour in about 100ml of water, put a lid on the pan, and simmer gently for 10–15 minutes until the chicken is cooked.

Step 5: Add the chopped tomatoes or tomato puree and cook for another couple of minutes until slightly thickened.

Step 6: Serve alongside rice and topped with fresh coriander leaves.

How to prepare time?

It serves 4 people. It takes a total time of 35–40 minutes from step one to step six.
