  • Prepare Time: 25 Minutes
  • Cooking Time: 1 Hour
  • Serves: 4 People

Ingredients

  • 1 tbsp oil
  • 500g chicken breast, diced
  • 1 onion, chopped finely
  • 4 cloves of garlic, crushed or grated with a garlic press
  • 2 tbsp curry powder – try to use a mild (hotter versions can be overpowering) but use hotter if you like it spicy. I used Patak’s Mild Curry Powder.

Cooking Directions

Step 1. Heat the oil in a large saucepan over medium heat and cook the onion for two minutes.

Step 2. Stir in the chicken, garlic, and curry powder and cook for five minutes or until the chicken is white.

Step 3. Chop up the courgettes and add to the saucepan with some salt and pepper. Stir everything together, cover with a lid and cook for fifteen minutes.

Step 4. Add a can of chopped tomatoes to the pan and stir well again. Cook for a further ten minutes.

Step 5. Stir in the peas and heat for 2-3 minutes until it is piping hot.

Step 6. Serve with rice or pasta to ensure you get your full quota of carbs, and enjoy!

Notes
