Prawn Green Curry Recipe is a light and healthy meal with a hint of heat. It is one of the most popular Thai dishes.
But it’s not hard to make it your own and tailor it to your tastes by adding additional ingredients.
What is Prawn Green Curry Recipe?
As the name suggests, Prawn Green Curry is a green curry made with prawns. The ingredients for this dish are very similar to a regular red curry, but it’s slightly greener due to the addition of green thai curry (green curry paste).
The green curry paste is not as spicy as the red one. It is an earthy and rich flavor that has become very popular in restaurants abroad.
This Prawn Green Curry Recipe is also called “Pra Rad Prik” or “Goong Kari.” Pra Rad Prik translates literally to “yellow prawn curry,” but it has nothing to do with color.
How To Make Prawn Green Curry Recipe?
- Prep time: 15 mins
- Cook time: 20 mins
- Total time: 35 mins
- Yield: 4
Ingredients
- 1/2 tsp. Salt
- 1 Tbsp. Fresh lime juice
- 2 Tbsp. Fish sauce (patis)
- 2 Tbsp. Vegetable oil for stir-frying
- 4 LG. Shallots, thinly sliced (about 1 cup)
- 1/4 cup Thai basil leaves and stems, loosely packed, sliced into 1-inch pieces
- 3/4 lb. Fresh jumbo prawns, peeled, deveined, and coarsely chopped (about 3 lb. total)
- 2 cups light coconut milk (with 1/2 cup water added)
- 1/4 cup Red Thai curry paste (pra rad prik)
- 3/4 cup Fresh green beans, cut into 4-inch-long pieces (about 1 lb.)
- 3 stalks of Celery, thinly sliced diagonally into half-inch pieces (about 1 cup)
- 8 whole eggs, hard-boiled and peeled
- 6 Bamboo shoots, well rinsed and sliced into 1-inch by 1-inch strips (optional)
- 1 tsp.
Method
Step 1. Wash, rinse, and drain the prawns. Let them dry.
Step 2. Heat a pan over medium-high heat. Add oil and the shallots, and cook for about 1 minute until fragrant. The shallots will turn golden in color and smell good. Do not brown them, though, as it will burn the shallot’s aroma.
Step 3. Add fresh basil stems and leaves to the pan, followed by freshly minced garlic cloves. Sauté for about 30 seconds until garlic is aromatic (you can also use a food processor to mince the garlic).
Step 4. Add prawns, vegetables, fish sauce, and green curry paste to the pan and cook for about 5 minutes.
Step 5. Pour in coconut milk and water (if you want to avoid coconut milk solids, add water in step 6). Please bring it to a simmer and cook for about 10 minutes until the vegetables are soft.
Step 6. In another pot, boil the eggs for about 3 minutes until hard-boiled at room temperature (the time will vary depending on the size of the eggs). Run cold water over the eggs – this is important to cool them down quickly before peeling them.
Step 7. Peel the eggs and slice them into rounds.
Step 8. Serve hot rice garnished with sliced hard-boiled eggs and fresh bean sprouts.
