Osha Thai Pumpkin Curry Recipe: Best 5 Freezing ideas

One of my favorite winter dishes filling but still healthy is Osha Thai Pumpkin Curry.

Recipe If you’re looking for a new fall and winter dish to try, I encourage you to give this recipe a try! This recipe will make enough sauce for (1) 16oz jar.

How to make Osha Thai Pumpkin Curry Recipe

Ingredients:

  • 4 tbsp coconut oil or vegetable oil (if desired)
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2-inch piece of ginger root
  • grated or finely diced

Method:

Step 1: Clean and dice pumpkin or squash. In a large pot, add 2 tbsp coconut oil over medium heat. Add onion, garlic, ginger, curry powder, and about 1 tbsp of the curry paste (if desired). Mix well.

Step 2: Add pumpkin and stir until pumpkin is slightly cooked.

Step 3: Stir in coconut milk (for a thinner sauce, add more coconut milk as desired), water or chicken broth, and sugar.

Step 4: Bring to a boil over high heat, then reduce to low-medium heat for about 20 minutes or until the pumpkin is fork-tender.

Step 5: Add more water, coconut milk, or chicken broth if needed. Stir occasionally to prevent sticking and burning (Keep in mind some of the sauce will come out of the pan as you stir).

Step 6: Serve over rice noodles.

Step 7: If desired, garnish with toasted nuts and extra curry paste. Enjoy!
