Ingredients For Marinade
- Oil – 1 tsp
- Mustard seeds – 1/2 tsp
- Red chili powder – 1 tsp
- Curry leaves – 2 nos.
- Turmeric powder – 2 pinches (optional)
- Onion + Green Chilies or Red Chilies or both- 1-2 nos. (1 cup finely chopped)
- Curry leaves – 3 tbsp. (or) 2 nos.
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1 tsp
- Red chili powder – 1/2 tsp
- Turmeric powder – 2 pinches (optional)
- Oil – 3 tbsp. + few drops to fry tadka
Preparation
Step 1.
Wash the shredded coconut and water and drain the water completely. Heat oil in a pan and add cumin seeds, mustard seeds, and red chili powder (You can adjust the quantity of red chili powder as per your preference).
When the seeds start spluttering, add chopped onion and stir for a few minutes until the onion edges turn brown. Add green chilies, curry leaves, and turmeric powder (optional) and cook for 5-7 minutes.
Step 2.
Add washed and drained beans and turmeric powder or salt to taste. Stir well until it is hot, then cover with a lid and cook for 3-4 mins on low flame. Switch off the flame completely.
Step 3.
The tadka for the curry is made by heating oil in a pan and adding cumin seeds, mustard seeds, and red chili powder. When the seeds start spluttering, add a few drops of ghee or coconut oil. Transfer the entire tadka to the cooked dal and mix well when this is done.
Step 4.
Finally add grated coconut (I used frozen) and mix until it melts well with dal. This is how you make a yummy and delicious Lima Beans Curry. It can be served with hot rice or roti, or paratha.
Recipe Notes
• You can crush the dal in a blender before adding it to the curry. This will make it easier to cook and save a lot of time because the dal will break easily when cooked in this method. You have to add water and leave it for 10-15 mins on medium flame. Then serve as usual.
• You can also add some veggies to the dal like carrots or potatoes.
• You can also make this a non-vegetarian recipe by adding fried chicken or meat pieces.
• You can adjust the quantity of oil and red chili powder as per your preferences. If you want a little spicy curry, add more oil and red chili powder to the tank.
