  • 3/4 cup sweet and sour sauce, 
  • 2 tbsp light soy sauce (40ml)
  • 1/4 cup tomato ketchup [sauce] (50ml)

Filling: 120g raisins or pineapple 100g sugar 2 tbsp olive oil 2 cloves garlic, chopped 1 stalk spring onion, chopped

Day 1 – Preparing the filling

Prepare:

Step 1: Soak the raisin in warm water for about 30 minutes. If you use pineapple for the filling, cut it into half and remove the hardcore. 

Step 2: Place the raisin and pineapple in a saucepan, and add enough water for the two fruits to be submerged. Simmer for about 20 minutes until the raisins are tender. Once done, drain the excess water and set it aside. 

Step 3: In a large bowl, mix sugar and olive oil. Heat it over medium heat until sugar is melted. Allow to caramelize, but don’t let it get browned or dark in color [watch out not to burn it]. 

Step 4: Add the warm raisin and pineapple, tomato sauce, salt, dark soy sauce, and dark vinegar. Then add one clove of chopped garlic and stir well. Finally, add pepper to taste. 

Step 5: Prepare the puff pastry as described in the instructions. Pre-heat oven at 180°C/350°F/Gas mark 4. Line baking sheet with parchment paper. 

Step 6: Roll out the puff pastry and cut it into 4 smaller rectangles. 

Step 5: Place about a tablespoon of filling in the center of each rectangle. Then fold the edges of the pastries making a half-moon, pinching them to close. 

Step 6: Place on the baking sheet and brush it with egg wash. Repeat until all the pastries are filled [you can use a piping bag if you have one]. Bake for about 15 to 20 minutes in the oven. 

Step 7: While baking, prepare the sauce by adding all the ingredients to a saucepan. Turn on low heat and simmer for about 5 minutes until the sauce thickens. 

Step 8: Top the cooked curry puff with caramelized sugar and serve with pasta, rice, or a glass of juice. Enjoy!

1. For best results, use fresh puff pastry instead of a frozen one. Frozen puff pastry tends to become chewy and dry when frozen, thus affecting the outcome of the bake curry puff recipe.
