- 2 no cloves
- 1/4 tsp fenugreek seeds
- 1 tsp cumin seeds
- 3/4 tsp fennel seeds
- 1 tbsp peppercorns
- 2 tbsp coriander seeds
- 1 cup shallots chopped
- 1 spring curry leaves
- 3 no green chili
- 2-inch ginger
- 2 tbsp garlic
- 1 medium tomato chopped
- 1/4 cup coconut pieces
- 1 tsp tamarind
For Curry
- 2 tbsp coconut oil
- 3/4 tbsp fennel seeds
- 1 spring curry leaves
- 1 large onion thinly sliced
- salt to taste
- 1 tsp turmeric powder
- 2 tbsp coriander leaves chopped
Directions For Muttai Curry Recipe
1. In a medium bowl, combine eggs, add salt and turmeric and beat till foamy.
2. Heat coconut oil in a medium pan on low heat. Add cinnamon stick, star anise, cloves, fennel seeds, fenugreek seeds, and peppercorns for 1-2 minutes till aromatic.
3. Incorporate the curry leaves and green chilli into the coconut oil, followed by onion slices until it turns translucent.
4. Add the ground mutton.
5. Sauté for a further 5 minutes till the mutton fat is rendered, and the spices turn slightly brown.
6. Add tomato and stir until it softens and breaks into pieces.
7. Stir in the coconut pieces, followed by tamarind, fennel powder, salt, and coriander powder.
8. Simmer for 3-4 minutes.
9. Add the rice.
10. Cover and cook for a further 10 minutes on low heat till the tamarind flavors are absorbed by the rice and the muttai curry is hot but not boiling.
11. Remove from heat and transfer to serving plates with roti (or surti) slices.
