Ingredients:

FOR CURRY

  • 250 grams of fish (I used King fish steaks)
  • 1/4 cup oil
  • 1 small ball of tamarind (around 1 tbsp)
  • A few curry leaves
  • Salt to taste
  • 1/2 tsp black mustard seeds
  • 2 green chilies
  • 1 tsp Kashmiri chili powder
  • 2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 cup shallots, sliced
  • 3–4 garlic flakes, sliced

FOR CURRY PASTE

  • 2 tsp oil
  • 1/2 tsp cumin seeds
  • 1/4 cup peeled and sliced garlic flakes
  • 1/4 tsp methi seeds (fenugreek seeds)
  • 3/4 cup peeled shallots (or pearl onions)
  • 1/2 cup cubed tomato
  • 1/2 tsp fennel seeds
  • 1/2 tsp whole black pepper

Instructions:

Step-1.

Make the “Fish Paste” by placing the sliced shallots and garlic cloves into a blender. Add enough water to cover the ingredients, then add the salt and blend on medium speed until smooth.

Step 2.

Heat some oil in a large, heavy-bottom pan and fry the garlic mixture on medium heat until light golden brown, stirring constantly.

Step 3.

Add the cumin, fennel, shallots, and fenugreek seeds to the pan and fry until they turn golden brown. Then add all of the remaining curry paste ingredients, except the tomatoes.

Step-4.

Add red chili powder, coriander powder, and turmeric powder into this mixture and continue frying on medium heat till everything turns very soft and releases its essence.

Step-5.

Add the tomato, tamarind, and water to bring the curry to a consistency that is not too thick nor too thin (about 5-6 cups). Mix well and cook for about 10 minutes on low heat.

Step 6.

When I am ready to add the fish, you must cut it into small slices so that it will cook quickly without burning.

Step 7.

Add the fish to the curry sauce, give it a good mix, and then add salt to taste.

Step-8.

This is a “fish paste,” so don’t add water, or this will be too soft and watery.

Step 9.

Keep on low heat for another 10-15 minutes while stirring occasionally. If you want, you can place chicken pieces in the curry to make it more filling.

Step 10.

After 15 minutes, you should see that the fish has cooked through and has taken on a nice reddish color.

Serve hot with some boiled rice and Khichuri.
