While the chicken cooks, sauté the onion and garlic in a large skillet sprayed with cooking spray over medium-high heat until tender.

Step three:  Add cooked rice, cilantro, and red bell pepper to the onion/garlic mixture and cook until heated through. Place the contents of the skillet back in the pan with the chicken and stir together to combine.

You can adjust the spice level by adding more of whatever spices you like, and again, test it out with your family to determine if you need to add more.
