- 250 g hazelnut flour (3 1/2 cups)
- 125 ml milk (½ cup + 1 Tbsp)
- 1 dash salt
- 1 lemon the zest if it’s not bitter
Instructions
1. Preheat oven to 180 C.
2. Grease a nonstick cake pan with butter and tap out the excess butter.
3. Arrange paper baking cups on top of the cake pan to be pressed onto the surface of the cake to keep the cake in place during baking.
4. Leave space around each cup so that it doesn’t touch other cups during baking. Spray water on a plate, and set it aside.
5. Beat butter and sugar until creamy, do not overbeat
6. Add vanilla sugar, salt, and milk; continue to beat
7. Add flour and baking powder in small batches into the batter, mix until just incorporated
8. Add hazelnut flour in small batches while mixing until fully incorporated
9. Evenly distribute the batter into the paper cups of your cake pan (Cupcakes with a teaspoon). Spray water on a plate and layout the cake pan.
10. Bake for 1 hour at 180 C; check after 50 minutes to prevent top burning. There should be cracks forming on top of the cake, but make sure not to overbake it. Bake for another 30-40 minutes if necessary. Check again periodically to avoid overbaking.
