Method:
1. Sift the flour and baking powder together, then mix in the ground almonds. Add milk and stir until combined; set aside.
2. In a separate, large bowl, beat the egg whites until stiff peaks form. Beat the yolks and sugar together in another large bowl until lightened in color and thickened.
3. Add the egg whites to the yolk mixture and stir gently with a wooden spoon or spatula.
4. Fold in sifted flour mixture into the egg mix gently but quickly to prevent excess air from getting into your cake batter.
5. Pour the batter into a prepared pan and spread evenly.
6. Cook for around 35 minutes or until the cake tester comes out clean or a toothpick inserted in the center of the cake comes out clean. Remove from the oven and let stand for 15 minutes before turning out onto a wire rack to cool.
7. Make caramelized topping: Melt butter and stir in brown sugar, then pour over cake; spread all over to coat evenly.
8. Let stand for 15 minutes, then serve.
