How To Make Pea Pickin Cake Recipe?

Ingredients

  • 1 pkg. yellow cake mix
  • 2 cans of cream of wheat (or 1 c of regular or nonfat creamed cottage cheese)
  • 3/4 tsp soda (optional – if you add this, you’ll get a nice ‘foam’ effect)
  • 1 can (15 oz) Riplets Mixed Cherry Pie Filling (or any cherry pie filling your family likes)

Directions

Step 1. Mix all ingredients in a large bowl with an electric mixer until well combined. Even though the filling is mixed, it will expand as the cake bakes. To prevent this from happening, try not to over mix.

Step 2. Bake in three 8 inch round cake pans at 350 degrees for 25-30 minutes or until a toothpick inserted into the middle of the cake comes out clean.

Notes: I do not measure when I make my cakes, so I don’t think I measured anything to use your senses and tell me if it’s right.

Why Is It Called Pea Pickin Cake?

I had heard that this cake was created when a plantation owner’s wife had to use the last of the peas, so she made her pea pickin cake. We may never know the true story, but this cake has become a staple.

To begin with, Momma used a yellow package cake mix, but you can also use homemade cakes. Second, Momma uses cream of wheat, just like the creamed cottage cheese for all you Southerners.
