- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 1/4 cups sugar
- 1 egg, at room temperature
- 1 cup sour cream, at room time
- 2 tsp. vanilla extract
- 3 tsp. instant coffee powder
- 3/4 cup plus 2 tbsp. all-purpose flour
- 3/4 cup cocoa powder
- 6 tbsp.
Method:
1. Preheat the oven to 175 degrees C.
2. Grease and flour a 10-inch cake pan; set aside.
3. In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3 minutes.
4. Add the egg, sour cream, and vanilla extract; mix well until combined.
5. In another bowl, sift together the flour and cocoa powder; add half of it to the cake batter and mix gently until combined.
Add the remaining flour mixture and mix briefly. Do not overmix the batter, or it will toughen the cake. Set aside.
5. To make the topping, melt the butter in a saucepan over low heat; add in the sugar, brown sugar, and cocoa powder,
constantly stirring until well combined. Remove from heat and whisk in ground coffee until smooth; set aside to cool slightly.
6. Pour half of the cake batter into the prepared pan and top with half of the chocolate mixture, then pour the remaining batter on top.
Use a spatula to smooth the top and swirl in a figure-eight pattern. Sprinkle evenly with the remaining chocolate mixture.
7. Bake for about 45 minutes, or until a toothpick inserted into the cake comes out clean. Cool in pan on a wire rack for 10 minutes;
loosen edge before turning out onto a serving platter to cool completely (about 45 minutes). Serve plain or frost with your favorite frosting.
