12. Turn the oven off and leave the cake in the oven for another hour to cool completely.

13. Place cake on a wire rack to cool completely, dust with unsweetened cocoa powder if desired. 

14. Store at room temperature in an airtight container for 3 days or the refrigerator for 7 days.
