Notes:

This recipe makes an unusual flavor which is the sweetness of the pineapple. You can adjust the amount of sugar used by ensuring it is not too sweet. Also, adjust the amount of pineapple juice used by providing that it is always enough to mix with all the dry ingredients.

Lastly, make sure you use room-temperature eggs and butter at room temperature to ensure a smoother consistency when baking.

Can You Freeze Taiwanese Pineapple Cakes?

Yes, you can freeze this cake. However, it is best to avoid freezing it at room temperature because condensation will form, and you will lose the cake’s texture. Instead, you can wrap it well in plastic wrap and place it in a freezer bag. As normal, defrost before eating. This cake is delicious with whipped cream or ice cream!

Can You Make Pineapple Cakes Gluten-Free?

Yes! Certain flours are gluten-free, like rice flour and cornflour. By using just a couple of these, the cake is gluten-free. However, the pineapple juice must be secured from having gluten in it.

You can use pineapple juice sold in boxes or canned without starch for this purpose. To make a cake with less sugar, you can also use unsweetened juice and replace the sugar with an equal amount of agave nectar or honey.

How Long Can Taiwanese Pineapple Cake Last?

This Taiwanese pineapple cake can be stored at room temperature for up to 3 days, covered. It can also be frozen for up to 6 months.

Conclusion

I hope you enjoy this recipe! Best wishes to everyone. To make a pineapple cake, we need to start with its ingredients. The first one is the pineapple. I chose the canned pineapple rather than a fresh one because it is easy to get and convenient.

It has been drained so that it will not be too juicy while melding the rest of the ingredients. The second ingredient is sugar, which will help soften the cake and make it sweeter and smoother.
